This bottle of 1981 Heidsieck Blanc de Blancs was from the 2021 crayeres release but it had already been disgorged over 30 years ago. It has a beautiful nose of lemon, orange rind, freshly ground coffee, roasted hazelnuts and the palate has apricot, toasted bread, nougat and hazlenut. It is amazing who fresh and vibrant this champaign is. The mousse is fine and gentle but it has a great mineral core that provides the silky palate with tension and energy. There is no evidence of oxidation either. Everything seems in its perfect place and allthough there are plenty of flavours this champagne is so subtle and elegant. It creates unique emotions that only the very best champagnes evoke after patient cellarage.
