Diebolt Vallois Fleur de Passion 2008 RD disgorged Apri 2022
These bottles were disgorged in April 2022 and have thus lain on the yeast for five years longer than the original Cuvee. This has made them even more complex and harmonious and they are now wonderful to drink.
Jacques Diebolt's Blanc de Blancs Fleur de Passion is made from wines aged in wooden barrels without malolactic fermentation. Seven to eight plots of very old vines in Cramant, especially the Lieu Dit Les Buzons and les Pimonts facing the morning sun, are produced with the utmost care and in homage to the grandfather with whom Jacques made his first Champagne in 1953. Any intervention that could affect the wine is avoided. No cold fermentation of the must, no filtering, no fining. The wines mature on the fine lees. Only the oak barrels, in which a vintage was already vinified in Burgundy, give the super-concentrated Chardonnay must from very small yields a subtle spiciness.
