Marguet's cuvee from the famous Grand Cru Ay consists of about two thirds Pinot Noir and one third Chardonnay. Ay is one of the warmest sites in Champagne because of its south-facing slopes on the Marne and has the best reputation for Pinot Noir of all the Grands Crus. In the past, the red still wines were particularly famous and, together with Vosne Romanee, were counted among the best Pinot Noirs in France. Ageing in egg-shaped wooden barrels, no pumping or filtering, small yields from biodynamic cultivation are the usual methods used to create the Marguet Mono Terroir champagnes. The Ay 2013 begins to integrate its new wood and starts to open its drinking window after three years of bottle ageing.
