History of Diebolt-Vallois
Jacques Diebolt began working with his grandfather in the late 1950s, who was already producing base wines for his own Champagnes without malolactic fermentation, aged in old oak barrels. After marrying Nadia Vallois, Jacques gained access to additional vineyards in Cuis and Chouilly. From 1978 onwards, he cultivated these plots, built a new cellar with modern facilities, and doubled production capacity.
In 1992, Diebolt-Vallois was named Champagne Producer of the Year by Gault Millau. Today, the estate is managed by the third generation, with annual production reaching around 150,000 bottles.
Vineyards and Terroir
The vineyards are located in the Grand Cru villages of Cramant, Avize and Oger. Particularly old Chardonnay vines grow in the parcels Les Pimonts and Les Buzons, which face east towards the morning sun and produce especially aromatic fruit.
Winemaking and Cellar Techniques
- Base wines are vinified partly in stainless steel and partly in used oak barrels that previously held a vintage from Burgundy.
- No malolactic fermentation is carried out for the Blanc de Blancs, especially Fleur de Passion, to preserve freshness, acidity, and aromatic complexity. The estate has increasingly avoided malolactic fermentation in other cuvées as well, adapting to a warmer climate.
- Extended lees ageing: standard Champagnes for 4–6 years, Fleur de Passion around 9 years.
- No cold fermentation, no filtration, no fining.
- Minimal or zero dosage to highlight terroir and varietal purity.
The Diebolt-Vallois Style
Diebolt-Vallois Champagnes are characterised by precise minerality, elegant fruit and subtle yeast complexity. Typical aromas include citrus, white flowers, pineapple, raspberry, yellow apple, brioche, nuts, vanilla and delicate oak spice. The mousse is fine and creamy, while the style remains pure, fresh and terroir-driven. When young, they show a firm mineral structure. The Prestige cuvée, with more reserve wines and longer lees ageing, shows deeper aromas, while the classic Blanc de Blancs benefits from additional cellaring.
Fleur de Passion also carries the gentle spice of new oak.

Fleur de Passion:
The Blanc de Blancs Fleur de Passion is a tribute to traditional Champagne craftsmanship, as Jacques Diebolt learned from his grandfather. The grapes come from seven parcels of very old Chardonnay vines in Cramant, including Les Buzons and Les Pimonts. The wine is aged in used oak barrels without malolactic fermentation. The barrels are relatively young, lending a subtle oak spice – though far less pronounced than in the wines of Anselme Selosse. Fleur de Passion matures more slowly than Selosse Champagnes and reveals delicate toasted notes, harmonious fruit and an elegant, mineral expression. With long lees ageing and minimal intervention, it ranks among the most coveted Blanc de Blancs Champagnes.
Conclusion
Diebolt-Vallois is among the leading grower Champagne producers of the Côte des Blancs. At Alfavin, you can discover and purchase the house’s refined Blanc de Blancs Champagnes, including the legendary Fleur de Passion. For lovers of elegant, mineral and complex Chardonnay Champagnes, Diebolt-Vallois remains an essential name.
