The Pur Mesnil has the crisp mineral structure of this great terroir, but at Bonville it is not hard and austere, instead developing a silky richness on the palate. Like Anselme Selosse, Olivier loves powerful, concentrated Chardonnay champagnes. The aromas are vanilla and lemon. This champagne is ready to drink now, but is only at the beginning of its development. The toasted notes from the partly new oak barrels are already well integrated and hardly noticeable. The picture shows a different vintage.
The Pur series consists of around 2,000 bottles for each of the terroirs Avize, Le Mesnil and Oger. Oger is the fruitiest and Le Mesnil often has the chalkiest structure. Aging in partly new wood provides attractive roasted aromas. Along with the Cuvee des Belles Voyes, the Pur champagnes are the house's top products.
The winery was founded in 1937 by Alfred Bonville and his son Franck. Following in his father Gilles' footsteps, Olivier is now the fourth generation. He works with his son-in-law Ferdinand Ruelle-Dudel, who is further developing the house commercially.
