Bollinger R.D. 2007 - Pleasure at the highest level
This elegant, harmonious champagne with an exciting palette of flavours is already a pleasure to drink. Croissant, vanilla brioche, sea salt butter and smoke hover over macadamia nuts, dark chocolate, dried apricots, Moro oranges, apple cake and hazelnuts. The perlage is very fine but persistent after the long yeast ageing. By avoiding malolactic fermentation, a fine acidity runs through the silky palate, ending in a long mineral finish.
2007 is characterised by a warm spring, rather cool summer and then heat and rain in August. The champagnes are rather light, as the grapes harvested at the end of August contained more juice after the rain. However, Bollinger decides not to harvest until September after dry winds have caused the grapes to shrivel again;
Vintages such as 2007 show how decisively the thirteen years of ageing on the lees can change a champagne. La Grande Année is harmonious and pleasing. However, R.D. 2007 has a complexity and intensity of flavours that its little brother lacks.
2007 R.D. consists of 70 per cent Pinot Noir, particularly from the Ay and Verzenay sites, and 30 per cent Chardonnay from the famous Côte de Blancs sites. It also contains small quantities from unusual 1er Cru sites such as Tauxières, which is the highest classified Premier Cu at 99, and Grauves, which has the most intense acidity among the Chardonnays of the Côte de Blancs with north-west slopes.
In the 1960s, Lily Bollinger had the then unusual idea of combining the fine ripeness of an older vintage, in which the fruit was no longer in the foreground, with the fierce freshness of a champagne that had just been disgorged. In 1967, three R.D. vintages were launched at the same time, as the quantities were small: The 1952 vintage is released in England, Bollinger's most important market. The 1953 is reserved for France and Switzerland. The 1955 vintage is already being released in the U.S.A. and Italy. The label for the 2007 is a reissue of the first label, as the same materials are used.
