Three months after disgorging, the Signature displayed the aromas of yeast storage: lemon floats above freshly buttered brioche. Now it is closed, mineral, pure and with racy acidity. We are still waiting for toasted aromas and a full, silky texture.
This Chardonnay is a blend of wines from the Côte de Blancs, Montgueux and Sézanne, aged for six months in steel tanks. Malolactic fermentation was carried out. The dosage is 7 g/l.
