The Celebris 2008 is well structured, delicate and mineral, with a lively acidity. Five years after disgorging, it is now beginning to open up.
Celebris is Gosset's prestige cuvée. This very old house is based in Ay, so it is not surprising that the style was similar to Bollinger: vinous, powerful Pinot Noir-based champagnes that were aged oxidatively in wood. After the sale to Cointreau in the 1990s, only the renunciation of malolactic fermentation was retained. The style has changed. Today's champagnes are straightforward, fresh and no longer oxidative.
The 2008 vintage of Celebris consists of 57% Chardonnay and 43% Pinot Noir and is an Extra Brut.
