The Premier Cru Chaumes lies on flat ground behind the estate and rises gently to La Tache. Other winegrowers have plots in the southern part, which is not bordered by La Tache but by Malconsorts. Compared to the Premier Crus on the steeper slopes, it has more body and richness with less mineral tension and finesse. 2019 convinces with a fine, seductive fruit. But it also has good structure for long ageing.

Neil Martin writs in his article about the annual burgfest blind tasting (pump up the volume: 2019 burgundy) on Vinous: The 2019 Vosne Romanee les Chaumes has a very pure and elegant bouquet, with more mineralité than its peers and lovely focus and harmony...This is beautifully balanced, elegant and suave with a natural flowing finish that leaves you yearning for another sip despite some reduction. This will be difficult to resist in its youth.

Maxime belongs to a new generation of winemakers who create Burgundy wines of exceptional quality with great sensitivity and respect for the terroir. His style is characterised by pure fruit, elegance and transparency. His motto is to intervene as little as possible in the natural process in order to optimally emphasise the origin and character of the wines.

The grapes are harvested and selected by hand and completely destemmed in most years. Ageing takes place in French oak barrels. Depending on the appellation, the proportion of new barrels varies between 30 and 100%. He always ensures that the wood does not mask the fine flavours of the wine. For the 2020 vintage, he uses barrels that are toasted even more gently and extends the ageing period. This gives the Pinot Noirs an even silkier texture.

The winery works sustainably and as ecologically as possible. In the cellar, Maxime favours spontaneous fermentation with natural yeasts and particularly gentle vinification, which he describes as ‘infusion’ rather than vigorous extraction. The wines are generally bottled unfiltered and without fining in order to preserve their authenticity.
