Domaine Poisot En Caradeux, Pernand-Vergelesses Premier Cru 2016
The picture shows a different vintage. The 1er Cru En Caradeux is located before you enter Pernand on the left hillside facing Corton Charlemagne which is on the other side of the valley. Remi Poisot owns 0,36 ha of fifty year old vines which are trained as simple Guyot. The limey stony cool clay soil which is exposed east has flintstone and marl in its subsoil and tends to ripen late. These old vines naturally yield little and they are cut back to six shoots in spring. Trellices and thinning of canopy provide optimum radiation to achieve perfectly ripe grapes. Unripe and diseased grapes are eliminated already at harvest to avoid contact with the healthy grapes.
The grapes will be destemmed and cold soak a few days in open vats before fermentation starts spontaneously with natural yeasts. Fermentation lasts fifteen to eighteen days. Once a day the must is pumped over. The wine then spends 16 to 18 months in barriques 20 % of which have been renewed. After the malolactic fermentation the wine is racked and a second time beofre it is bottled unfiltered. In normal years there are about 1800 bottles, in 2015 und 2016 there is a lot less.
