Dom Perignon 2012 is irresistably delicious now. It hasa racy acidity that will support it in its further development. This is masked by the usual opulent fruit, which is a little less exotic, but marked by lemon, green apple and peach. There are also the yeasty roasted notes of toasted bread, coffee and almond. Despite its usual seductive nature, even after the first intense mousse fades, it has a tingling, lively minerality and chalky notes on the palate. .Like 2008, 2012 is unusually fine and balanced for a young Dom Perignon. While champagne friends usually wait until the young, seductive but not really complex aromas of the yeast ageing recede and the quality of the base wines comes to the fore with more minerality and freshness, 2012 already has this extra dimension of elegance and freshness.
